Our Lower Block, Clone 76 Chardonnay was hand picked and rigorously sorted to ensure perfectly intact and undamaged grapes for this skin fermented, natural wine. Fermentation was indigenous, as was the malolactic conversion. Following 14 days of total maceration, the ferment was gently pressed in a basket press and allowed to reach dryness, as well as rest on lees for three months before racking off lees. Minimal sulfite addition with no fining or filtration at bottling.
The wine is a pale lemon/orange colour with a slight haze. The nose presents aromas of ginger root, citrus zest, earthiness and a “struck matchstick” flintiness. The palate is fruity and earthy with layers of interest making this an intriguing wine.
