Winemaking:
Our Carp Ridge Pinot Noir grapes, grown organically as well as biodynamically, were harvested with rigorous selection and sorting, over three days: September 28-30. After gentle crushing and destemming to stainless steel tanks, the must underwent a cultured fermentation over a total average maceration time of 21 days, before gentle basket pressing, settling and racking to French oak, Burgundy format cooperage for eight months elevage. Clonal profile is 41% 115, 30% 667, and 29% 777. Oak profile is 10% New, 82% Neutral Oak, 8% Stainless Steel. Bottling followed barrel blending, no fining and minimal filtration.
Tasting Notes:
The wine is pale garnet in colour. There is an ethereal nose of red currant and strawberry, subtle earth and spice notes enveloped by a delicate florality of rose petal. The palate offers soft tannins, bright acidity and pure pinot noir fruit unclouded by new oak. Purity and elegance in the glass.
