Winemaking
This wine is made from Vidal grapes produced by 30 year old vines in Niagara. Upon gentle pressing of the grapes, the juice was cold settled and racked to stainless steel tank for cultured fermentation and no malolactic conversion. After 11 days, the fermentation was halted to produce an off-dry, aromatic style that was aged in stainless steel for five months before sterile filtration and bottling.
Tasting Notes
Notes of lemon, yellow plum and white flowers with a refreshing balance of acidity and sweetness providing a weighty mouthfeel and medium long finish.
