The Chardonnay grapes for this wine were sorted, and gently pressed, prior to cold settling and racking to stainless steel fermentation tanks. Fermentation was conducted using cultured yeast over a period of three weeks. No malolactic conversion. A period of 9 months ageing on lees with periodic battonage lends palate richness. Bottling followed cold stabilization, bentonite fining and sterile filtration. Enjoy young but has some cellar potential.
This wine is medium lemon in colour. Dry, and youthful, this wine is fruit forward revealing fresh apple, asian pear along with a nuance of fennel seed, and is framed by a mid-palette richness achieved with lees aging and periodic battonage. The finish is warm, round and persistent. Enjoy young.
