Winemaking:
The grapes were hand-picked and sorted prior to gentle pressing, cool settling of the juice, indigenous fermentation and ageing, over 10 months, in French oak, Burgundy format cooperage (18% new, 54% neutral, and 28% stainless steel.). The clonal blend consisted of 46% clone 95, 35% clone 76 and 19% clone 548. Biweekly battonage of 65% of the wine during elevage lends a creamy mouthful and extended finish. Malolactic conversion was 75% so as to maintain a brightness and freshness to the wine. Upon barrel blending, the wine was gently bentonite fined and cold stabilized with minimal filtration at bottling.
Tasting Notes:
This wine is pale lemon green in colour. The nose presents stone fruit, pear and apple enveloped by toasted almond/ hazelnut, brioche, and subtle vanilla notes. The palette is both creamy and fresh replaying the layered richness of fruit, nuts and spice of the nose with an impressive long and elegant finish.
