Winemaking:
Our Carp Ridge Chardonnay grapes were harvested with rigorous selection and sorting, on two dates, with 50% early picked on October 4 and 50% later picked on October 21. Clonal profile is 95 with contributions from 548 and 76. Following gentle pressing, the juice was cool settled and racked to French oak, Burgundy format cooperage for indigenous fermentation over a time frame of 5 months. Oak profile is 19% New, 70% Neutral and 11% Stainless Steel. Total elevage of ten months. Weekly battonage of each barrel over 4 months prior to blending, light bentonite fining and cold stabilizing before minimal filtration and bottling.

Tasting Notes:
The wine is pale lemon in colour with a green hue. The nose shows notes of apple, pear, lemon zest, toasted hazelnut and brioche. The palate is, at once, rich and lively with a wet stone-like minerality that frames the fruit and is balanced by a creamy texture that finishes long and fresh.
