The grapes were harvested by hand then gently pressed to yield juice which was put to a combination of French oak barrels and stainless-steel tank for fermentation (20% New Oak, 15% older oak and 65% stainless steel). Extensive battonage contributes richness to the mouthful and breadth to the palate. Following 10 months of ageing, the wine was blended, lightly bentonite fined and aged for a further 5 months in stainless steel before course filtration and bottling.
The nose presents apple and pear notes with nuances of toasted almond and fresh bread. The palate is focused and fresh yet with enough richness to nicely frame the fruit and lead to a medium long finish. Some bottle time will be rewarding for this youthful chardonnay.
