The grapes were picked then gently whole cluster pressed to render a chardonnay juice which was then cool settled and racked to French oak, Burgundy format barrels for fermentation with cultured yeast. New oak comprised 13% with the remaining wine evolved in older oak (39%) and stainless-steel barrels (48%) with extensive lees battonage of 40% of the blend. Following primary fermentation, only a partial malolactic conversion was permitted to retain a crisp and lively acidity. The wine spent nine months in barrel before blending, light bentonite fining and filtration to bottle.
This wine is medium lemon in colour. The nose shows a purity of white pear, citrus and subtle oak with a palette that displays vitality and freshness with ample acidity, fruit and alcohol that will reward extended cellaring. Prolonged, elegant finish.
