The grapes were hand picked and sorted prior to gentle crushing and destemming to fermentation tanks. Total maceration time was 25 days prior to pressing, settling and racking to a combination of second fill barrel (33%) and neutral (67%) French oak barrels for nine months aging. Complete malolactic conversion. The barrelled wine was then blended, unfined and only coarsely filtered before hand bottling.
This wine is medium garnet in colour. The nose presents a perfume of black cherry, black tea and autumn forest floor, finishing with very subtle oak spice. The palette shows impressive density of cherry fruit and earthy notes with a freshness and complexity that carries into a long finish.
