The Vidal grapes for this wine were harvested in the cool morning air and then gently pressed to produce a sweet juice which as cool-settled and racked to stainless steel tanks for fermentation. Following primary fermentation, the secondary malolactic conversion was blocked so as to preserve acidity and freshness. The secondary fermentation was carried out in closed, stainless steel tanks at cool temperature to capture “sparkle” and fresh fruit characteristics.
This wine is light lemon in colour. Off-dry, and youthful with an pronounced yet fine and sustained mousse. There are delicate aromas of lemon rind, green melon, and wet stone. The vibrant acidity and balanced sweetness produces a bright, vivacious wine with an elegant and cleansing finish.
