Following hand harvest, the pinot noir grapes were whole cluster pressed with minimal skin contact time so as not to extract too much colour or tannin from the skins and seeds. The juice was then cold settled and racked to stainless steel tank for cool fermentation using cultured yeast for maximal aromatics. No malolactic conversion was conducted so as to preserve fruitiness and acidity. Gentle fining and cold stabilization preceded sterile bottling after 7 months of aging in tank.
The wine is pale rose petal pink in colour. The nose presents aromas of strawberry, citrus zest, and cherry with a palate which has racy acidity, heightened aromatics and a fresh cleansing finish.
