The hand harvested grapes were gently pressed with little duration of skin contact so as not to extract too much colour or tannin. A 17 day fermentation with cultured yeast in stainless steel tanks, with no malolactic conversion produced a wine with bright fruit and racy acidity. Light bentonite fining, cold stabilzation preceded spring bottling.

Tasting Notes:
A rosé style very much inspired by Provence, the wine is very pale pink in colour with notes of strawberry and red cherry, lemon zest joined by a palate that shows racy acidity and fresh fruit character.
