Pinot Noir grapes were hand-picked, sorted, crushed and destemmed prior to 12 hours of skin soaking, gentle pressing, cool settling, and racking to stainless steel tank for fermentation with cultured yeast. Following primary fermentation, no malolactic conversion was permitted. The two separate vineyard lots were then blended and cold stabilized with a light bentonite finding prior to sterile filtration and bottling.
This wine is light pink in colour. Bone dry, and youthful with a lifted nose of lemon, strawberry and pink grapefruit. Bright acidity and light palate weight lead to a fresh, dry and elegant finish. Enjoy young.
