Winemaking:
The Pinot Noir grapes for this wine were cool harvested from a Niagara Benchland vineyard on the morning of September 16, 2022. The vines are older at 20-30 years of age providing good complexity and character in the resulting wine. Once picked, the grapes were quickly pressed to minimize skin contact and colour pick up of the juice. Cool fermentation, over 13 days, in stainless steel tanks with cultured yeast and no malolactic conversion, followed by an 8 month period of rest to allow for gentle bentonite fining, settling, cold stabilization and filtration have prepared this wine for bottling on June 2, 2023.
Tasting Notes:
The wine is pale pink in colour with a nose of maraschino cherry, strawberry and lemon zest. The palate is fruity with notes of cherry and strawberry, a hint of lemon zest and mouth watering acidity. There is a medium weight palate and lingering fruit on the finish.
