Winemaking:
The grapes were machine picked and then immediately whole cluster pressed to minimize colour pick up. Once cold settled, the juice was racked to stainless steel fermenters for inoculation with cultured yeast. After 14 days, the fermentation was halted to block malolactic conversion of the acids, bentonite fined and cold settled for 12 days prior to racking. Following cold stabilization and tank ageing over five months, the wine was sterile filtered and bottled.
Tasting Notes:
The Farmer’s Rosé, very light, pale salmon in colour, presents a nose of subtle strawberry, grapefruit and lemon zest. The palate is round and creamy, replaying the fruit notes found on the nose, with a finish that is balanced, soft and persistent.
