This wine was made from grapes sourced both from Niagara-on-the-Lake (83%) and Kinburn (17%). Following cool early morning harvests, crushing and destemming, this wine was oak fermented with cultured yeast for 16 days followed by gentle, small basket pressing, settling and racking for oak aging over a period of five months. Complete malolactic conversion. Course filtration at bottling. Do not chill to help avoid natural sediment formation.
The wine is light purple in colour. Dry and youthful with an elegant balance of fruit, acidity and pronounced notes of rose, dark raspberry , and vanilla. The finish is subtly smoky, fruity and medium long. To be enjoyed young or following short term cellaring.
