Winemaking:
“Fort” – Sort for fortified.
The grapes were hand-picked at Vankleek Hill Vineyards, in Champlain Ontario and then whole cluster fermented in stainless steel with a cultured yeast. Total maceration time of 14 days was achieved before gentle basket pressing, settling and racking to neutral French Oak, Burgundy format barrels (76%) and stainless steel (24%) for 8 months elevate.
Barreled and stainless volumes were blended after elevage and only coarsely filtered before hand-bottling.
Tasting Notes:
The wine is deep purple in colour with a nose of blackberry, dried fig, tobacco, spice and chocolate notes with a rich mouth feel, substantial yet soft tannins, concentrated raspberry, strawberry, and raisin flavours are followed by a long, warm and sweet finish.
