Winemaking:
The grapes for this wine were grown in the Lincoln Lakeshore sub-appellation of Niagara, close to Lake Ontario where the cooling effect of the water lengthens the growing season and increases ripening time. After gentle pressing of the grapes, the juice was cold settled and racked to stainless steel tanks for cultured fermentation and no malolactic conversion. After 14 days of fermentation the wine was gently bentonite fined and cold stabilzed, then aged in stainless steel for 6 months before sterile filtration and bottling.
Tasting Notes:
Pronounced nose of rose petal, jasmine, lychee and grapefruit zest. The palate replays the same floral and fruit notes with a richer and slightly waxy texture leading to a long, dry finish.
