Winemaking:
Upon harvest the grapes were destemmed and crushed to stainless steel fermentation tanks for vinification with cultured yeast over a period of two weeks before gentle pressing and racking for oak aging over 18 months. No fining. Bottled after sterile filtration.
Tasting Notes:
Nose of cassis and raspberry, friend herbs, bell pepper, and subtle baking spice. The palate is fruity with fresh acidity and ample soft tannins leading to a finish which is medium long showing persistent fruit and toast notes.
