Winemaking:
The grapes were picked, sorted and destemmed in the field prior to crushing to stainless steel fermentation tanks and inoculated with cultured yeast. Following a total maceration time of 20 days, the fermentations were pressed and the wine settled for five days prior to racking to Burgundy format barrels for four months elevage with 25% new oak. After barrel blending, the wine was unfined and only coursely filtered prior to bottling.
Tasting Notes:
The wine is pale purple in colour with a classic nose of peppers, red currant, dried herbs, subtle notes of star anise and vanilla. The palate is round and juicy with depth of fruit, well integrated and soft tannins lending the framework for a long finish.
