The grapes were hand harvested and 100% whole cluster fermented with cultured yeast over 10 days with gentle pressing, settling and racking to neutral French oak, Burgundy format barrels for nine months elevage before filtration and bottling. Unfined

Tasting Notes:
Pale Ruby in colour, this wine has a complex nose of raspberry, red currant, cocoa, freshly turned earth and dried herbs. The palate is soft, and at once both fruity and earthy with a medium elegant finish.
