Winemaking:
The grapes were hand picked, cluster sorted to ensure only the best fruit was used. Grapes were then  destemmed and uncrushed to stainless steel fermenter and inoculated with a cultured yeast. Fermentation and maceration time occurred over 12 days at which time the fermentations were pressed.  The wine was permitted four days of settling before being racked to Burgundy format, neutral oak barrels for elevage over nine months. After barrel blending, the wine was unfined and only coursely filtered before being bottled. 

Tasting Notes:
Medium garnet in colour, the wine shows a nose of cherry, turned earth and autumn leaves and a palate which has well balanced, refreshing acidity along with layers of fruit and earthy notes enveloped in fine, soft tannins, lending very good length.
