Winemaking:

The grapes for this wine were blended prior to secondary fermentation at a higher sugar content to preserve ripe fruit character.  The secondary fermentation was carried out in pressurized, stainless-steel tanks at a cool temperature to trap the “sparkle” in this wine and preserve fruit character.

Tasting Notes:

This wine is medium pink in colour.  Semi-sweet with a pronounced, yet fine, and sustained mousse. The nose presents white peach, candied strawberries, honeysuckle, and rose blossom. The palate is round and full of pronounced ripe fruit character, sweet berries, strawberry jam and grapefruit zest.
