The grapes for this wine were sourced from the Niagara Peninsula. Once harvested the grapes were gently pressed, and the juice cool settled before racking to stainless steel tank for fermentation with cultured yeast and no malolactic conversion. Following a total fermentation time of 20 days, the wine was aged on lees, with occasional battonage, for four months, before gentle bentonite fining, cold stabilizing, and sterile filtration at bottling.
The colour is pale lemon. The nose presents notes of banana, green pineapple, ripe pear and honeydew melon. The palate is well balanced with a generous creamy texture and body, freshness and a replay of the fruit found on the nose. The finish is dry, fruity, and sustained.
